Mexican Quinoa Stuffed Peppers
INGREDIENTS
- 6 large bell peppers, red, green, yellow or orange
- 1 pound Kroger® lean ground turkey
- ½ cup red onion, chopped
- 2 cloves garlic, minced
- 2 Tablespoons tomato paste
- 1 (15 oz) can Kroger® Black Beans, drained and rinsed
- 1 (14.5) oz can Kroger® petite diced tomatoes
- 1 (15 oz) can Kroger® sweet corn
- 1 cup Kroger® tri-color quinoa, uncooked
- 2 teaspoons chili powder
- 1 teaspoon cumin
- Juice of one lime
- salt and pepper to taste
- 2 cups Kroger® Sharp Cheddar Reduced Fat Cheese, divided
