Mexican Quinoa Stuffed Peppers


INGREDIENTS



  • 6 large bell peppers, red, green, yellow or orange
  • 1 pound Kroger® lean ground turkey
  • ½ cup red onion, chopped
  • 2 cloves garlic, minced
  • 2 Tablespoons tomato paste
  • 1 (15 oz) can Kroger® Black Beans, drained and rinsed
  • 1 (14.5) oz can Kroger® petite diced tomatoes
  • 1 (15 oz) can Kroger® sweet corn
  • 1 cup Kroger® tri-color quinoa, uncooked
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • Juice of one lime
  • salt and pepper to taste
  • 2 cups Kroger® Sharp Cheddar Reduced Fat Cheese, divided
